Cheesy Jalapeño Shortbread is a savory twist on classic buttery shortbread, made with sharp cheddar and finely chopped jalapeño tucked into a crisp, tender cookie. The edges bake up lightly golden while the centers stay rich and crumbly with little pockets of cheese and pepper throughout.
These aren’t sweet shortbread cookies. They’re salty, cheesy, and slightly spicy, making them perfect for appetizer platters, holiday snack trays, or something crunchy to serve alongside soup.
Sharp cheddar and butter make these wonderfully rich, while fresh jalapeño cuts through that richness with a little heat.
They’re also an excellent make-ahead appetizer. The dough can stay chilled until you’re ready to slice and bake, which is especially useful when preparing food for a gathering.
How Spicy Are These?
That depends largely on the jalapeño. Removing the seeds and pale inner membranes gives you a milder pepper flavor, while leaving some intact adds more heat.
Why Does The Dough Need To Chill?
Cold dough is much easier to slice cleanly and spreads less in the oven, helping the shortbread keep its round shape.
What Cheddar Works Best?
Sharp cheddar is my first choice because its flavor remains noticeable after baking. Extra-sharp cheddar works well if you want an even stronger cheese flavor.
Why Is My Dough Crumbly?
A little crumbliness is normal for shortbread. Gently press the dough together rather than adding liquid immediately.
Can I Make The Dough Ahead?
Yes. The wrapped dough logs can be prepared ahead and refrigerated, then sliced when you’re ready to bake.
Can I Freeze The Dough?
Absolutely. Freeze the tightly wrapped logs and thaw them in the refrigerator until they’re firm but easy enough to slice.
And there’s no rolling pin or cookie cutter required. Once the dough is shaped into logs, these become simple slice-and-bake savory cookies.
The dough is especially convenient because it can be shaped into logs and refrigerated ahead of time. When you’re ready to bake, simply slice the chilled dough into rounds and put them straight onto the baking sheet.
I like chopping the jalapeño quite finely so you get a little pepper flavor in every bite without large pieces interfering with the delicate shortbread texture.
