Ingredients
For the salad:
- 1 lb 450 g raw shrimp, peeled, deveined, and tails removed
- 3 cups chopped romaine lettuce
- 1 cup cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 cup red bell pepper diced
- 1/4 cup red onion finely chopped
- 1/4 cup fresh parsley chopped
- 1 avocado diced
For the dressing:
- 1/4 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 small garlic clove minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cook the shrimp: Bring a pot of lightly salted water to a gentle boil. Add the shrimp and cook for about 2–3 minutes or until they turn pink and opaque. Drain and let them cool.
- Chop the shrimp: Once cool enough to handle roughly chop the shrimp into bite-sized pieces.
- Make the dressing: In a small bowl whisk together the mayonnaise, lemon juice, olive oil, Dijon mustard, garlic, salt, and black pepper until smooth.
- Assemble the salad: Add the chopped lettuce cucumber, tomatoes, bell pepper, red onion, parsley, avocado, and chopped shrimp to a large bowl.
- Toss: Pour the dressing over the salad and gently toss until everything is evenly coated.
- Serve: Taste and adjust the seasoning with a little more lemon juice salt, or pepper if needed. Serve immediately or chill for 15–20 minutes before serving.
