Coconut cream pie is one of those desserts that feels right at the end of a relaxed family dinner. It has a crisp, buttery crust filled with a smooth coconut custard and finished with a cloud of lightly sweetened whipped cream.

The filling is rich without being heavy, with plenty of coconut flavor and a soft, creamy texture that holds its shape when sliced. Toasted coconut on top adds a little chew and a deeper, nuttier flavor.

This pie does need some chilling time, so it’s especially convenient when you want dessert mostly finished before guests arrive. Make it the morning of a dinner, chill it all afternoon, and add the whipped cream shortly before serving.

Why It Works

The secret to a good coconut cream pie is a properly cooked custard. Cooking the milk, sugar, eggs, and cornstarch gently thickens the filling without scrambling the eggs, while coconut milk gives the custard a fuller coconut flavor than regular milk alone.

I like using both coconut milk and shredded coconut. The coconut milk flavors the custard throughout, while the shredded coconut gives you those little bites of texture that make the pie unmistakably coconut.

A fully cooled crust is important, too. If you pour warm filling into a warm crust, the bottom can soften before the pie has a chance to set properly.

Ingredients You’ll Need

Pie Crust

Use one 9-inch baked and cooled pie crust. Homemade or refrigerated pie pastry both work well. Blind-bake it until lightly golden, then let it cool completely before adding the filling.

Coconut Milk

Use full-fat canned coconut milk for the creamiest custard. Shake the can well before measuring so the coconut solids and liquid are evenly combined.

Egg Yolks

Egg yolks give the filling its rich, custardy texture. Temper them gradually with the hot milk mixture to prevent them from cooking too quickly.

Cornstarch

Cornstarch helps the custard thicken and gives the finished pie enough structure to slice neatly.

Shredded Coconut

Use unsweetened shredded coconut in the filling so you can control the sweetness. Toast a little extra for the topping if you like.

Whipped Cream

Heavy whipping cream, powdered sugar, and vanilla make a simple topping that balances the rich coconut filling without making the pie overly sweet.

How To Make Coconut Cream Pie

1. Bake And Cool The Crust

Prepare and blind-bake a 9-inch pie crust according to your recipe until the edges and bottom are lightly golden. Let it cool completely while you make the filling.

For an especially crisp crust, make sure there are no warm spots left before adding the custard.

2. Start The Coconut Custard

In a saucepan, whisk together 1 ½ cups whole milk, 1 cup full-fat coconut milk, ¾ cup granulated sugar, ⅓ cup cornstarch, and ¼ teaspoon salt until smooth.

Cook over medium heat, whisking frequently, until the mixture becomes noticeably thicker and begins to bubble gently.

3. Temper The Egg Yolks

Whisk 4 large egg yolks in a separate bowl. Slowly drizzle about 1 cup of the hot milk mixture into the yolks while whisking constantly.

Pour the tempered yolk mixture back into the saucepan and continue cooking for about 2 minutes, whisking constantly. The custard should be thick enough to coat the whisk and hold soft peaks.

Remove it from the heat and stir in 2 tablespoons butter, 1 teaspoon vanilla extract, and 1 cup unsweetened shredded coconut.

4. Fill And Chill

Pour the hot coconut custard into the cooled pie crust and smooth the surface. Press plastic wrap directly against the custard to prevent a skin from forming.

Refrigerate for at least 4 hours, preferably longer. The pie needs to be thoroughly chilled before slicing.

5. Finish With Whipped Cream

Beat 1 cup cold heavy cream, 2 tablespoons powdered sugar, and ½ teaspoon vanilla until medium-stiff peaks form.

Spread or pipe the whipped cream over the chilled pie. Sprinkle with toasted coconut just before serving.

FAQs

Can I Use Coconut Cream Instead Of Coconut Milk?

Coconut cream is much thicker and richer, so it isn’t a direct substitute. Stick with full-fat coconut milk for the recipe as written.

How Do I Know When The Custard Is Done?

The custard should become visibly thick and should gently bubble while you’re whisking. Once thickened, give it another couple of minutes of cooking to make sure the cornstarch is fully activated.

Why Did My Custard Turn Lumpy?

Usually, the heat was too high or the eggs weren’t tempered gradually. If you notice small lumps, immediately strain the finished custard through a fine-mesh sieve before pouring it into the crust.

Can I Make Coconut Cream Pie Ahead?

Absolutely. The pie can be made a day ahead and kept refrigerated. Add the whipped cream and toasted coconut closer to serving for the freshest texture.

How Do I Keep The Crust From Getting Soggy?

Bake the crust thoroughly until golden and cool it completely before filling. A well-chilled custard also helps maintain the crust’s texture.

Can I Freeze Coconut Cream Pie?

I don’t recommend freezing the fully assembled pie. The custard and whipped cream can become watery or grainy after thawing.

Recipe Variations

Chocolate Coconut Cream Pie

Add ½ cup semisweet chocolate chips to the hot custard after removing it from the heat. Stir until completely melted for a chocolate-coconut version.

Toasted Coconut Pie

Toast all of the shredded coconut in a dry skillet over medium-low heat until lightly golden. Let it cool before stirring some into the filling and using the rest on top.

Almond Coconut Cream Pie

Add ½ teaspoon almond extract alongside the vanilla. The almond flavor pairs especially well with coconut and adds a subtle bakery-style note.

Graham Cracker Crust

Replace the pastry crust with a baked graham cracker crust. Its slightly sweet, crunchy texture works beautifully with the creamy filling.

Banana Coconut Cream Pie

Arrange thin banana slices over the cooled crust before spooning in the coconut custard. Finish with whipped cream and toasted coconut.

Storage

Keep leftover coconut cream pie covered and refrigerated for up to 3 days. Store it in the refrigerator rather than at room temperature because of the dairy and egg-based custard. For the cleanest slices, use a sharp knife and wipe it between cuts.

What To Serve With Coconut Cream Pie

Coconut cream pie is lovely on its own, but a cup of hot coffee, black tea, or espresso makes a natural pairing. If you’re serving it after a big meal, fresh berries or sliced strawberries add a bright contrast to the creamy filling, while a small scoop of vanilla ice cream is a good choice when you want to lean fully into dessert.

Give the pie plenty of time to chill before slicing. That four-hour minimum isn’t just a suggestion—the custard needs that time to firm up enough for clean, creamy slices.

For the nicest finish, toast the coconut until just golden rather than deeply browned. It can go from toasted to burnt surprisingly quickly, and the lighter toast keeps the delicate coconut flavor front and center.

Instructions

  • Bake the crust: Preheat the oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish, crimp the edges, and prick the bottom lightly with a fork. Sprinkle with the sugar. Line with parchment and pie weights, then bake for about 15 minutes. Remove the weights and bake another 5–8 minutes, until lightly golden. Let cool completely.
  • Make the filling: In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
  • Temper the egg yolks: In a separate bowl, whisk the egg yolks. Slowly add about 1 cup of the warm milk mixture while whisking constantly. Pour the egg mixture back into the saucepan.
  • Cook until thick: Cook over medium heat, whisking constantly, until the mixture comes to a gentle boil and becomes thick and creamy, about 5–7 minutes. Continue cooking for about 1 minute while whisking.
  • Add the coconut and flavorings: Remove from the heat and stir in the vanilla, shredded coconut, and butter. Mix until the butter melts completely and the filling is smooth.
  • Fill and chill: Pour the warm coconut filling into the cooled pie crust. Press plastic wrap directly against the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or until completely set.
  • Make the whipped cream: Beat the heavy cream, powdered sugar, and vanilla with an electric mixer until medium-stiff peaks form.
  • Finish the pie: Spread or pipe the whipped cream over the chilled pie. Sprinkle with toasted coconut just before serving.
