Ingredients
- 20 large white or baby bella mushrooms
- 8 oz 225 g cream cheese, softened
- ½ cup shredded Parmesan cheese
- ¼ cup finely chopped green onions
- 2 cloves garlic minced
- 2 tbsp chopped fresh parsley
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- 2 tbsp breadcrumbs
- 1 tbsp olive oil
- ¼ cup shredded mozzarella cheese optional
Instructions
- Prepare the mushrooms: Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line a baking sheet with parchment paper.
- Gently wipe the mushrooms clean with a damp paper towel. Remove the stems and finely chop them. Arrange the mushroom caps in the prepared baking dish, cavity side up.
- Make the filling: In a medium bowl, combine the softened cream cheese, Parmesan, chopped mushroom stems, green onions, garlic, parsley, Italian seasoning, salt, and black pepper. Mix until everything is evenly incorporated.
- Stuff the mushrooms: Spoon the cream cheese mixture generously into each mushroom cap. Don't worry about slightly overfilling them—the creamy filling will settle as it bakes.
- Sprinkle the breadcrumbs over the tops. If using mozzarella, add a small pinch over each mushroom for an extra cheesy, golden topping.
- Drizzle the stuffed mushrooms lightly with olive oil.
- Bake: Place in the oven and bake for 18–20 minutes, or until the mushrooms are tender and the filling is hot and lightly golden.
- For a more golden top, switch the oven to broil for 1–2 minutes at the end. Watch carefully so they don't burn.
- Let the mushrooms cool for 5 minutes, then garnish with a little extra fresh parsley and serve warm.
