Ingredients
- 1 ½ pounds smoked sausage sliced into ½-inch rounds
- 1 ½ pounds baby potatoes halved
- 1 medium yellow onion sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley optional
Instructions
- Preheat the oven to 425°F (220°C). Lightly grease a large rimmed baking sheet or line it with parchment paper.
- Prepare the potatoes. Add the halved potatoes and sliced onion to a large bowl. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, Italian seasoning, salt, and black pepper. Toss until everything is evenly coated.
- Arrange on the pan. Spread the potatoes and onions in a single layer on the prepared baking sheet. Roast for 25 minutes, stirring once halfway through.
- Add the sausage. Remove the pan from the oven and add the sliced smoked sausage. Toss everything together, then spread it back into an even layer.
- Finish roasting for another 15–20 minutes, or until the potatoes are tender and golden around the edges and the sausage is browned.
- Serve. Sprinkle with fresh parsley if desired and serve hot.
