French Silk Slab Pie has all the appeal of a classic French silk pie, but it’s baked in a rectangular pan so there’s plenty to share. A crisp chocolate cookie crust holds a smooth, intensely chocolate filling that’s light and silky rather than heavy.

The filling gets its texture from melted chocolate, softened butter, and whipped cream. A little vanilla and salt keep the chocolate flavor rounded, while a generous layer of whipped cream on top makes each slice feel especially creamy.

This is a great dessert when you’re feeding a crowd because the slab shape makes neat, easy-to-serve squares. It’s right at home on a holiday dessert table, at a family gathering, or alongside coffee after Sunday dinner.

Why It Works

The chocolate cookie crust gives the pie a crisp contrast to the soft filling. I like using a good-quality semisweet chocolate here because it gives the filling a deep chocolate flavor without making it overwhelmingly sweet.

The filling needs time to chill and set properly, so this isn’t a dessert to rush. Once refrigerated, it becomes firm enough to slice while still keeping that smooth, almost mousse-like texture.

Ingredients You’ll Need

Chocolate Cookie Crust

Use chocolate sandwich cookies or chocolate wafer cookies for the crust. Crush them very finely so the crust holds together when sliced, and mix them thoroughly with melted butter.

Semisweet Chocolate

Choose a chocolate you enjoy eating on its own. Melt it gently and let it cool slightly before adding it to the butter mixture so it doesn’t soften the filling too much.

Butter And Sugar

Softened unsalted butter creates the rich base of the filling. Beat it with granulated sugar until noticeably lighter and fluffy; this step helps give the finished pie a smooth texture.

Eggs And Vanilla

Use room-temperature eggs for a more even mixture. Since this style of French silk filling traditionally uses eggs, use pasteurized eggs if you have concerns about serving them raw.

Heavy Cream

Cold heavy cream is whipped separately and folded into the chocolate mixture. Keep it chilled until you’re ready to whip it for the best volume.

Topping

More whipped cream and chocolate shavings finish the pie. A few curls of semisweet or dark chocolate are enough to make the top look finished without adding unnecessary sweetness.

How To Make French Silk Slab Pie

Prepare The Chocolate Crust

Heat the oven to 350°F (175°C). Crush 24 chocolate sandwich cookies into fine crumbs and combine them with 5 tablespoons melted butter.

Press the mixture firmly into the bottom of a 9×13-inch baking pan. Bake for 8–10 minutes, then let the crust cool completely before adding the filling.

Melt The Chocolate

Melt 6 ounces of semisweet chocolate in a heatproof bowl over a saucepan of barely simmering water, stirring occasionally. You can also use short intervals in the microwave.

Set it aside to cool until it’s warm but no longer hot. If the chocolate feels hot to the touch, give it a few more minutes.

Build The Filling

Beat 1 cup softened unsalted butter with 1 cup granulated sugar for about 4–5 minutes, until pale and fluffy. Add 1 teaspoon vanilla and a pinch of salt.

Beat in 3 pasteurized eggs, one at a time, mixing for several minutes after each addition. The mixture should become smooth, creamy, and noticeably lighter.

Pour in the cooled melted chocolate and mix until evenly combined.

Fold In The Whipped Cream

Whip 1 cup cold heavy cream until it reaches medium-stiff peaks. Gently fold it into the chocolate mixture in two or three additions, using a spatula rather than a mixer.

Spread the filling evenly over the cooled crust. Cover and refrigerate for at least 6 hours, preferably overnight.

Finish And Slice

Before serving, whip another 1½ cups heavy cream with 2 tablespoons powdered sugar and 1 teaspoon vanilla until soft peaks form. Spread or pipe it over the chilled pie and finish with chocolate shavings.

For cleaner squares, chill the pie thoroughly and use a sharp knife wiped clean between cuts.

FAQs

Can I Make French Silk Slab Pie Ahead?

Yes. It’s actually better when made ahead because the filling has plenty of time to set. Prepare it the day before serving and add the whipped cream topping shortly before serving.

Why Is My Filling Too Soft?

Usually, it needs more chilling time. The butter and whipped cream need to firm up in the refrigerator, so give the pie several hours before judging its texture.

Can I Use A Different Pan?

A 9×13-inch pan works best for a classic slab pie. A slightly smaller pan will make a thicker filling and may require additional chilling time.

Do I Have To Use A Chocolate Cookie Crust?

No. A chocolate graham cracker crust or a baked pastry crust can work, although the cookie crust gives the pie its easiest chocolate-forward finish.

Can I Freeze It?

Yes. Freeze the pie without the whipped cream topping, tightly covered, for up to 1 month. Thaw it overnight in the refrigerator and add fresh whipped cream before serving.

How Do I Get Clean Slices?

Make sure the pie is completely chilled. Dip a sharp knife in hot water, wipe it dry, and slice; clean and rewarm the knife between cuts.

Recipe Variations

Oreo-Style Crust

Use chocolate sandwich cookies for an especially simple crust. Leave the filling as written so the chocolate doesn’t become overly sweet.

Dark Chocolate Silk

Replace the semisweet chocolate with bittersweet chocolate for a deeper, less sweet flavor.

Espresso Chocolate

Add 1 teaspoon instant espresso powder to the melted chocolate. It won’t make the pie taste like coffee; it simply intensifies the chocolate.

Peanut Butter

Swirl a few tablespoons of smooth peanut butter over the crust before adding the chocolate filling for a chocolate-peanut butter version.

Mint Chocolate

Add ½ teaspoon peppermint extract along with the vanilla, then garnish with dark chocolate shavings.

Storage

Keep the finished pie covered and refrigerated for up to 3 days. The whipped cream topping is best within the first day or two. If freezing, wrap the un-topped pie tightly and thaw it in the refrigerator rather than at room temperature.

What To Serve With French Silk Slab Pie

This pie is rich enough to stand on its own, but I like serving it with a cup of hot coffee, espresso, or unsweetened tea to balance the chocolate. For a more festive dessert plate, add a few fresh raspberries or strawberries alongside each square. A small scoop of vanilla ice cream also works if you’re serving it straight from the refrigerator and want an extra-cold, creamy contrast.

Give the pie plenty of time to chill before slicing. That patience makes a noticeable difference in the texture and gives you those clean, defined layers of crust, chocolate filling, and whipped cream.

French Silk Slab Pie

This French Silk Slab Pie is rich, creamy, and irresistibly chocolatey, with a buttery crust and silky chocolate filling topped with fluffy whipped cream. It’s an easy crowd-pleasing dessert that’s perfect for holidays, gatherings, or whenever you’re craving something decadent.

Instructions

  • Make the crust: Preheat the oven to 350°F (175°C). Combine the chocolate cookie crumbs, melted butter, sugar, and salt until evenly moistened.
  • Press the mixture firmly into a 9×13-inch baking pan, covering the bottom in an even layer. Bake for 8–10 minutes, then cool completely.
