Good morning! I can’t believe how fast the 4th of July has snuck up on me! ha! Only a few more days until we can celebrate! Yay! One of our family’s favorite 4th of July traditions is having a cook out outside or at the park. How about you? One of our must have side dishes is potato salad. Potato salad goes great with all the usual cook out foods ~ hamburgers, hot dogs, pork chops & BBQ. They all taste a little better with some potato salad on the side. So today I am excited to share this yummy Picnic Potato Salad made with one of the brand new Hidden Valley Ranch flavors ~ Sweet Chili. I also have a Walmart coupon for you. So keep reading!
Everyone knows that Hidden Valley Ranch Flavors are great on salads or as a dip, but did you know they make the perfect ingredient for some of your favorite dishes? Yes, they do! For this recipe you’ll need:
5 pounds of Idaho potatoes, peeled, cooked & drained
1 pkg green onions, chopped
3 eggs, hard boiled & chopped
3 celery stalks, diced
4 tbs. parsley, chopped
1 1/2 cups Hidden Valley Ranch Sweet Chili dressing
salt & pepper to taste
*This recipe is based on this one that I found on the Hidden Valley Ranch website. They have TONS of yummy recipes over there!
First, peel, chop & cook your potatoes on the stove. Drain & then let cool slightly.
After your potatoes have cooled slightly add the celery, green onions & parsley.
Add the eggs & the Hidden Valley Ranch Sweet Chili dressing.
Stir until combined. Then cover & refrigerate for 4-6 hours.
Then the only thing left to do is to enjoy! This salad would be perfect for your next BBQ! 🙂
