Slow Cooker 3-Ingredient Sausage Cheese Dip is a warm, creamy party dip made with savory sausage, melted cheese, and diced tomatoes with green chilies. It’s rich, a little zesty, and exactly the kind of dip that tends to keep people gathered around the slow cooker.
This is one of my favorite styles of appetizer when I don’t want to spend the whole party thinking about the food. Brown the sausage, add everything to the crockpot, and give it an occasional stir while the cheese melts.
Three ingredients really are enough to make a flavorful, creamy dip. The sausage brings plenty of savory seasoning, the cheese creates that smooth consistency, and tomatoes with green chilies add just enough acidity and heat to balance the richness.
There’s very little hands-on work after the sausage is browned. You don’t need to make a separate sauce or stand over a saucepan waiting for cheese to melt.
It’s also easy to scale up for a larger gathering. Just make sure your slow cooker has enough room to stir everything comfortably.
It works especially well for game day, holiday parties, movie nights, or casual get-togethers. Keep a big bowl of tortilla chips nearby and let everyone help themselves.
The slow cooker is particularly useful here because once the dip is creamy, you can switch it to WARM and keep it ready for serving without constantly reheating it.

Ingredients You’ll Need
You only need three ingredients for this easy slow cooker dip:
- Ground sausage
- Processed cheese
- Diced tomatoes with green chilies

How To Make Slow Cooker 3-Ingredient Sausage Cheese Dip
Step 1: Add the sausage to a large skillet over medium heat. Cook until completely browned, breaking it into small crumbles as it cooks.
Step 2: Drain the sausage thoroughly. Removing the excess grease is important here; otherwise, it can separate from the cheese and leave an oily layer on top of the finished dip.
Step 3: Cut the processed cheese into small cubes. Smaller pieces melt faster and more evenly than adding one large block to the slow cooker.
Step 4: Add the cooked sausage, cubed cheese, and diced tomatoes with green chilies to the crockpot. Keep the liquid from the tomatoes unless you prefer an especially thick dip.
Step 5: Cover and cook on LOW for about 1½–2 hours, stirring every 20–30 minutes as the cheese melts. Avoid using HIGH heat if possible, since gentle heat gives the cheese a smoother texture.
Step 6: Once the cheese is completely melted, stir everything thoroughly. The finished dip should be creamy and easy to scoop without being watery.
Step 7: Switch the slow cooker to WARM for serving. Give the dip an occasional stir, particularly if it’s sitting out for a while.

Sausage Cheese Dip Variations
Spicy Sausage Dip
Use hot breakfast sausage and a hotter variety of tomatoes with green chilies for an easy spicy version.
Mild Sausage Dip
Choose mild sausage and mild tomatoes with green chilies when serving people who prefer less heat.
Beef Cheese Dip
Replace the sausage with well-drained cooked ground beef for a slightly different flavor.
Extra-Tomato Dip
Add a little more drained diced tomato if you prefer more tomato pieces throughout the cheese.
Thicker Sausage Dip
Drain the tomatoes thoroughly before adding them for a thicker dip that sits especially well on tortilla chips.
Storing Leftover Sausage Cheese Dip
Let leftover dip cool, then transfer it to an airtight container and refrigerate within two hours. Use it within about 3–4 days.
Reheat gently in the microwave or return it to the slow cooker on LOW, stirring occasionally. If the refrigerated dip is very thick, add a small splash of milk or reserved tomato liquid as it warms.
What Kind Of Sausage Should I Use?
Regular breakfast sausage works well and gives the dip plenty of flavor. Hot sausage is a good choice when you want more heat.
Should I Drain The Tomatoes?
You don’t have to. The liquid helps loosen the melted cheese. For a thicker dip, drain off some of the liquid before adding the tomatoes.
What Processed Cheese Works Best?
A block-style processed melting cheese is ideal because it stays smooth and creamy in the slow cooker without separating easily.
Can I Make The Dip Ahead?
Yes. Brown the sausage ahead and refrigerate it. You can also prepare the entire dip, chill it, and reheat it gently in the slow cooker before serving.
Why Is My Cheese Dip Too Thick?
It naturally thickens as it sits. Stir in a small amount of the reserved tomato liquid or milk until it reaches the consistency you prefer.
How Long Can I Keep It On Warm?
Keep the dip on the slow cooker’s WARM setting while serving and stir periodically. For food safety, don’t leave perishable dip sitting at room temperature for more than two hours.
What To Serve With Slow Cooker 3-Ingredient Sausage Cheese Dip
Tortilla chips are my first choice with this sausage cheese dip because they’re sturdy enough for a good scoop of sausage and melted cheese, but corn chips, pretzel bites, or toasted baguette slices work too. For a party spread, I’d put the crockpot right on the table with chips nearby and add a vegetable tray, sliders, or a few other easy finger foods around it. Bell pepper strips and celery are good for something fresh, but honestly, most people are going straight for the tortilla chips. Just keep a spoon in the crockpot and give the dip a stir every so often while it stays warm.
Take the extra minute to drain the browned sausage really well. With only three ingredients, excess grease is much more noticeable in the finished dip.
And melt the cheese slowly. Gentle heat and occasional stirring give you a much smoother Slow Cooker Sausage Cheese Dip than trying to rush everything on high.
