Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup whole milk

For the Pastry Cream

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

For the Chocolate Ganache

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream
  • 1 tablespoon unsalted butter

Instructions

  • Prepare the oven: Preheat the oven to 350°F (175°C). Grease a 9×13-inch sheet pan and line the bottom with parchment paper.
  • Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  • Make the batter: Beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  • Gradually add the dry ingredients, alternating with the milk. Mix just until the batter is smooth and combined.
  • Bake: Spread the batter evenly into the prepared pan. Bake for 20–25 minutes, or until the center springs back when lightly pressed and a toothpick comes out clean. Let the cake cool completely.
  • Make the pastry cream: Heat the milk in a saucepan over medium heat until steaming but not boiling. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until smooth.
  • Slowly whisk the hot milk into the egg mixture. Return everything to the saucepan and cook over medium heat, whisking constantly, until the mixture becomes thick and creamy, about 3–5 minutes.
  • Remove from the heat and stir in the butter and vanilla. Transfer the pastry cream to a bowl, cover the surface directly with plastic wrap, and refrigerate until completely chilled.
  • Assemble: Once the cake and pastry cream are cold, spread the pastry cream evenly over the top of the cake.
  • Make the ganache: Heat the heavy cream until just simmering. Pour it over the chocolate chips and let sit for 2 minutes. Stir until smooth, then mix in the butter.
  • Let the ganache cool for a few minutes, then spread it gently over the pastry cream layer.
  • Chill and serve: Refrigerate the cake for at least 1 hour to allow the layers to set. Slice and serve chilled.
